Our first single variety Chardonnay. Smokey cedar on the nose with a zesty lemon, gooseberry, apple & a

creamy yoghurt finish. Aged for 12 months in refurbished French oak barrels.

Single-site Pinot Noir was hand-picked in late October. Daily punch-downs ensured good extraction from the

delicate skins adding bright red-fruit notes and a dash of black pepper spice to the juice.

Fermentation took 18 days, and after completion the wine was racked into 228-litre French oak barrels where

it underwent malolactic fermentation which helped to soften the acidity and add a slight creaminess.

The wine was matured for 13 months in oak before bottling

This is a serious and weighty Amber (or Orange) wine, made entirely from Chardonnay. Macerated for 23

days before being basket pressed into a terracotta amphora and aged for 10 months, after which the wine was

aged on cork for a year. 

The resulting wine is a deep but bright amber colour, with a remarkable tension and grip. The wine has

layers of bright citrus peel, bitter lemon, Comte, hints of clove and star anise with an earthy and smokey

note. 

The fermentation started spontaneously with wild yeasts present on our grapes. No additives, filtration or

fining. Bottled according to the Biodynamic calendar.

Grape Variety: Pinot Noir

Winemaking: Organic / biodynamic Pinot Noir grapes grown by Ham Street in Kent were harvested by hand.

2-week whole bunch maceration in fibreglass and fermentation with indigenous yeast. Aged in old barrels

for 9 months before being bottled with no fining, filtration or added sulphur.
